What I Designed Today (a few weeks ago): Put on The Armor of God for Stake Auxiliary Training

I used the floral artwork from lenlis at BigStock for the flowers and then added the “Put on the Armor of God” text and made a few changes to use for a themed presentation at auxiliary training. It was so cute, I left it up at home for a week after the event! I’m including pics of the wonderful cookies with labels and chocolate covered strawberries served. I don’t know if anybody else liked it but the strawberries alone were worth it for me!

Christmas Decorating for the Nativity

The world’s best designer was out of commission this year so I was asked to help decorate the refreshment room for our church’s community nativity display. I am by no means a professional but I am pleased with the results. You’d have to know what I had to start with to accurately judge, but since my goal was to PURCHASE next to nothing for this project (I like to throw money at problems when I don’t have time to deal with them!), I can honestly say I achieved my goal. The only two things I purchased: the whole bolt of chocolate brown burlap — and the two 96″ tablecloths used nearly all of that –and secondly, the teeny tiny nativity shown in the glass. It’s still too big but I was amazed at the lack of miniature creches available at Hobby Lobby in my small hometown. Rest assured I’ll be on the hunt for tiny nativities online! All in all, though, few purchases and yet a decent success. My favorite thing: the burlap camels from TJMaxx. They are adorable with or without the gold bells I put around their necks. I hope we get lots of visitors to the nativity display at the church this weekend and that all who come eat cookies and think of the true meaning of Christmas!

Yummy & Soft – Pumpkin Cranberry Cookies

I made these cookies last year and found this old post. I am so thankful I found it because a) I loved the recipe and forgot where it was and b) I wanted to share it even without a good picture of the cookies!

I am NOT usually a cookie freak, since I just made a triple batch of chocolate chip cookies just last week, but I had some whole frozen cranberries to use up and my mother claims to not like chocolate (really, I met another person who doesn’t like chocolate this week – where are you people coming from?!). I wanted to make a cookie my Mom would like since they are coming over for dinner today {sigh: this year my mother is 1,000 miles away}. These are a great alternative to the popular pumpkin chocolate chip cookie. I like the tart cranberries in there! Give it a try – the recipe is from my tried-and-true vegetable and harvest cookbook called The Victory Garden Cookbook by Marian Morash. We have never had a bad recipe from the cookbook.

Pumpkin Cranberry Cookies

1 cup sugar
1 tsp vanilla extract
1 egg
1 c. pureed cooked pumpkin
2 1/4 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup cranberries
1 T grated orange peel
1/2 cup chopped nuts

Cream butter and sugar until light and fluffy. Beat in vanilla, egg, and pumpkin. Sift together flour, baking powder, baking soda, salt and cinnamon; beat into pumpkin mixture. Halve cranberries (I left ’em whole and they worked out fine!) and stir into mixture along with orange peel and nuts (again, left those out, more kid friendly). Drop by rounded teaspoonfuls onto a greased cookie sheet. Bake in a preheated 375° F oven for 10 to 12 minutes. Makes approximately 36 cookies. Again: I left out the orange peel and nuts and these were still very delicious!

Christmas Cookies – Good ‘Ol Chocolate Chip

I had several sticks of butter softening on my counter since Thanksgiving and I knew I wanted to make cookies for the kids’ school lunch treats and as I thought of what my family likes best (and we like so many different cookies!), but what we like best is the old standby: chocolate chip. Sure the Nestle recipe is great. So is just about every other chocolate chip cookie recipe — you just can’t seem to go wrong whatever version you choose. So, I baked away and tripled the recipe and used up my butter! Some will be shared, some stored in the freezer and many packed in lunches this week. Hooray for cookies (and counters that are cleaner in the end)!
