Cheap & Easy Chicken Thighs

Fabulous recipe. Must share. My kids loved it, too.


1/4 c dry bread crumbs (we used panko)
1 tsp salt
1 tsp ground cumin
1 tsp paprika
1 tsp chili powder
1 tsp curry powder
1/4 tsp pepper
8 chicken thighs, skin removed (we didn’t remove the skin and it was really, really good!)

Place all ingredients in a large resealable bag and shake it all up thoroughly. Place on baking sheet coated with cooking spray. Bake, uncovered in a 400 degree oven for about 20 minutes. Turn chicken pieces and bake 20 to 25 minutes longer.

  1. Thanks! I liked it so much I just tried it for dinner again tonight – using frozen tenderloins – still tasted great but the coating didn’t “stick” as well. I think I’ll stick with the thawed, skin-on thighs next time!!! I just liked it so much I was hungry for it. Sauteed zucchini on the side…yum! Hope you like it too.
